It’s rhubarb season! So let’s get a baking…delicious moist rhubarb walnut muffins. A favourite in our household.
INGREDIENTS
- 1 cup brown suger
- 1/4 cup salad oil
- 1 egg
- 2 tsp vanilla
- 1 cup buttermilk
- 1-1/2 cups finely diced rhubarb
- 1/2 cup walnut pieces
- 2-1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp fleur de sel
INSTRUCTIONS
Combine brown sugar, oil, egg and vanilla. Beat until well blended. Stir in buttermilk, rhubarb and nuts.
Sift flour with baking powder, baking soda and salt. Add all at once to the rhubarb mixture and stir until just moistened.
Fill greased muffin tins two-thirds full. Bake at 400 degrees F for 15-20 minutes.
