Pure sea salt from Salt Spring Island, British Columbia

Sel artisanal fait sur Salt Spring Island, British Columbia


(there is lots of room here for you to include or exclude the veggies you would like to add). You really can’t go wrong:

  • 1 large onion
  • 1/2 small jalapeño pepper
  • One carrot
  • 2 potatoes
  • Green beans (handful)
  • Bunch of cilantro
  • 2 litres chicken bouillon
  • Use leftover chicken carcass from roasted chicken or chicken breast, wings, drum sticks
  • Lemon juice



Sauté 1 chopped onion and 1/2 small jalapeño chop until golden in olive oil. Then add one chopped carrot and 2 diced potatoes, chopped green beans. Add 2 litres of chicken bouillon and chicken pieces. Simmer for 1-1/2 hours.

When ready break an egg in the soup and mix in soup. Serve in plate, add lemon juice, grated parmesan cheese, chopped cilantro and a teaspoon of sour cream.

Add a few strips of pan crisp corn tortillas for that crunchy finish.

Sprinkle our lemon zest fleur de sel.
