INGREDIENTS
(there is lots of room here for you to include or exclude the veggies you would like to add). You really can’t go wrong:
- 1 large onion
- 1/2 small jalapeño pepper
- One carrot
- 2 potatoes
- Green beans (handful)
- Bunch of cilantro
- 2 litres chicken bouillon
- Use leftover chicken carcass from roasted chicken or chicken breast, wings, drum sticks
- Lemon juice
INSTRUCTIONS
Sauté 1 chopped onion and 1/2 small jalapeño chop until golden in olive oil. Then add one chopped carrot and 2 diced potatoes, chopped green beans. Add 2 litres of chicken bouillon and chicken pieces. Simmer for 1-1/2 hours.
When ready break an egg in the soup and mix in soup. Serve in plate, add lemon juice, grated parmesan cheese, chopped cilantro and a teaspoon of sour cream.
Add a few strips of pan crisp corn tortillas for that crunchy finish.
Sprinkle our lemon zest fleur de sel.
